Blueberry sauce



I love homemade blueberry sauce…..whether it is spooned over a slice of cheesecake or on top of fluffy pancakes or also eaten along with a smooth panna cotta…it’s just absolute heaven.

The thing I love the most about blueberry sauce…is that it comes together on the stovetop in less than ten minutes with just a few ingredients.



Blueberries were called “star fruits” by North American indigenous people because of the five-pointed star shape that is formed at the blossom end of the berry. The blueberry is one of the only foods that is truly naturally blue in colour. The pigment that gives blueberries their distinctive colour—called anthocyanin—is the same compound that provides the blueberry’s amazing health benefits.


The silvery sheen (or “bloom”) found on the skin of blueberries is a naturally occurring compound that helps protect the fruit. This is why you should only wash blueberries right before you’re going to eat them. Consumption of blueberries has been linked to health benefits including a reduced risk of cancer, increased insulin response, a reversal in age-related memory loss, and lowering blood pressure.


Blueberry sauce is a sauce prepared using blueberries as a primary ingredient. It is typically prepared as a reduction, and can be used as a dessert sauce or savory sauce depending on the preparation. 


So here’s the recipe:


Ingredients

  • 2 cups fresh or frozen blueberries

  • 1/2 cup granulated sugar
  • 2 tablespoons fresh lemon juice


Method 

  • In a medium saucepan over medium heat, combine the blueberries, sugar and lemon juice. Stir frequently, and bring to a low boil.
  • Simmer until the homemade blueberry sauce is thick enough to coat the back of a metal spoon, about 5 minutes.
  • Remove from heat. 


Notes

  • The amount of sugar that you use will depend on the sweetness of your berries, simply adjust the amount to suite your taste.
  • If the sauce is too thick, slowly add in water until you reach the desired consistency. But, if the sauce is too thin, then add cornstarch paste to the berries and simmer. 
  • Replace the blueberry with strawberry, follow the same method and you’ll get strawberry sauce. 



So, there you go…a homemade Blueberry Sauce that comes together in just a few minutes. Try a spoonful with your morning yogurt, dolloped over a stack of pancakes, or spooned on top of cheesecake for a delicious treat!  Yumm!!!
