Triple Chocolate mousse

They say that no matter how old you grow, being with your siblings instantly takes you back to childhood. For me, growing up with my younger brother was one of the greatest adventures of my life. We laughed at the silliest things, fought endlessly over the TV remote, teamed up in countless rounds of Contra and Mario, rewatched our favorite movies until we knew every line, and savored delicious meals on our trips to the Gulf. He was, in fact, my very first “Foodie Buddy.”

Though the years have passed and life has carried us to different continents, food remains our bond. Even today, amidst the hustle and bustle, our conversations often circle back to what we loved eating as kids and what delights us now. Back then, birthdays were simple—no grand cakes or parties, and we never felt the need. But today, we embrace every occasion with joy, no matter the distance. Whether near or far, we celebrate each other’s milestones with heartfelt gestures.

When my brother celebrated his milestone birthday Down Under, we joined in the celebration from afar with a homemade treat: triple chocolate mousse in a glass. This indulgent dessert begins with a crunchy Oreo cookie base, layered with silky dark chocolate, creamy milk chocolate, and smooth white chocolate mousse. Sounds elaborate? Not at all! You’ll be surprised at how simple it is to make. Elegant yet effortless, this triple chocolate mousse is the perfect centerpiece for birthdays, anniversaries, Valentine’s Day, holidays, or any special gathering.

Here's the recipe:

Ingredients

Oreo Crust

7 oz (200g) oreo cookies

4 tbsp (60g) butter, melted

Dark Chocolate Mousse

5 oz (150g) semi-sweet chocolate

1 cup (250ml) cream

1 tsp (4g) gelatin powder

1 tbsp +1 tsp (20ml) cold water

Milk Chocolate Mousse

5 oz (150g) milk chocolate

1 cup (250ml) cream

1 tsp (4g) gelatin powder

1 tbsp +1 tsp (20ml) cold water

White Chocolate Mousse

5 oz (150g) white chocolate

1 cup (250ml) cream

1 tsp (4g) gelatin powder

1 tbsp +1 tsp (20ml) cold water

Method

Prepare the crust. Place the oreo cookies into the bowl of a food processor and crush until crumbs form. Add melted butter and process until evenly moistened. Divide the mixture and press into the bottom of each dessert cup. Refrigerate until the first layer of mousse is prepared.

Prepare dark chocolate mousse.  In a heat proof bowl add the semi-sweet chocolate and cream. Place the bowl over a saucepan with simmering water, over low heat until all the chocolate is melted. Meanwhile dissolve gelatin in cold water and let it swell for about 5 to 10 minutes. Place the gelatin over low heat just until the gelatin dissolves and pour it over the melted chocolate mixture. Let the chocolate mixture cool completely at room temperature.

Add melted chocolate mixture and mix until well combined.

Pour the chocolate mousse over the crust and refrigerate for about 15-20 minutes to set slightly, until you prepare the next layer of chocolate mousse.

Repeat the same steps for preparing the milk and white chocolate mousse layers.

Refrigerate the dessert cups for 4 hours or overnight to set.

Make this classic chocolate dessert in minutes with just a few ingredients – light yet delicious. Perfect for fuss-free entertaining to end a rich meal.

Using the same ingredients, we can make a cake too - a triple chocolate mousse cake. For this we need to use a springform pan. Just press the Oreo mixture into the bottom of a greased 8 inch (20 cm) springform pan using the back of a spoon. Refrigerate until the first layer of mousse is prepared. Then follow the same steps for filling the 3 different layers of chocolates as mentioned above.

Refrigerate the cake for 4 hours or overnight to set. Run a knife around the edges of the cake to remove the sides of the pan. Before serving dust the top of the cake with cocoa powder and decorate with fresh berries or more chocolate if desired. Enjoy!!

Crunchy Veggie salad with a thousand island dressing

A salad is one such dish which consists of small pieces of food mixed with a sauce. It may contain virtually any type of ready to eat food. What I like about salads is that we can be so creative with the ingredients which is based around a wide variety of foods like vegetables, fruits, cooked meat, eggs, nuts and leafy greens. Garden salads use a base of leafy greens like lettuce, arugula, kale or spinach; they are common enough that the word salad alone often refers specifically to garden salads.  Other types include Mexican bean salad, tuna salad, Lebanese fattoush, Greek salad, Thai Raw Papaya Salad and Japanese somen salad (a noodle-based salad). The sauce used to flavor a salad is commonly called a salad dressing; well-known types include Ranch, Thousand Island, Caesar and French vinaigrette. Salads can be served at any point during a meal such as an appetiser or side dish or as a main course.  Food historians tell us salads (generally defined as mixed green...
