Triple Chocolate mousse



They say that no matter how old you become, when you are with your siblings, you revert back to your childhood. Growing up with my kid brother was one of the best adventures of my life. We’ve laughed over the silliest of things, fought for the tv remote almost everyday, we played as a team in home video games of Contra and Mario, watched the same movies over and over again and enjoyed the food during our every trip to the Gulf. He was my first “Foodie Buddy”. Years have passed by, and now when we are living in different continents, amidst the hustle and bustle of everyday life, we still connect over food in our conversations of what we used to eat in the past and what we relish today. Growing up, we didn’t have big celebrations during birthdays with cakes and parties…didn’t feel the need then…but today, we look forward to celebrate any occasion. So, whether we’re near or far, birthdays and anniversaries we celebrate for each other wherever geographically we are. While my kid brother celebrated his milestone birthday Down Under, we celebrated along with a homemade triple chocolate mousse in a glass. 

Now, this delectable chocolate dessert has an oreo cookie base that’s topped with dark chocolate, milk chocolate and white chocolate mousse. Sounds complicated?? Nah!!! Wait until you see how easy it is to create! This triple chocolate mousse in a glass is a perfect dessert for parties, birthdays, Valentine’s day, holidays and any other occasion.

Ingredients

Oreo Crust

7 oz (200g) oreo cookies

4 tbsp (60g) butter, melted


Dark Chocolate Mousse

5 oz (150g) semi-sweet chocolate

1 cup (250ml) cream

1 tsp (4g) gelatin powder

1 tbsp +1 tsp (20ml) cold water


Milk Chocolate Mousse

5 oz (150g) milk chocolate

1 cup (250ml) cream

1 tsp (4g) gelatin powder

1 tbsp +1 tsp (20ml) cold water


White Chocolate Mousse

5 oz (150g) white chocolate

1 cup (250ml) cream

1 tsp (4g) gelatin powder

1 tbsp +1 tsp (20ml) cold water


Method 

Prepare the crust. Place the oreo cookies into the bowl of a food processor and crush until crumbs form. Add melted butter and process until evenly moistened. Divide the mixture and press into the bottom of each dessert cup. Refrigerate until the first layer of mousse is prepared.

Prepare dark chocolate mousse.  In a heat proof bowl add the semi-sweet chocolate and cream. Place the bowl over a saucepan with simmering water, over low heat until all the chocolate is melted. Meanwhile dissolve gelatin in cold water and let it swell for about 5 to 10 minutes. Place the gelatin over low heat just until the gelatin dissolves and pour it over the melted chocolate mixture. Let the chocolate mixture cool completely at room temperature.

Add melted chocolate mixture and mix until well combined.

Pour the chocolate mousse over the crust and refrigerate for about 15-20 minutes to set slightly, until you prepare the next layer of chocolate mousse.

Repeat the same steps for preparing the milk and white chocolate mousse layers. 

Refrigerate the dessert cups for 4 hours or overnight to set.

Make this classic chocolate dessert in minutes with just a few ingredients – light yet delicious. Perfect for fuss-free entertaining to end a rich meal. 



Using the same ingredients, we can make a cake too - a triple chocolate mousse cake. For this we need to use a springform pan. Just press the Oreo mixture into the bottom of a greased 8 inch (20 cm) springform pan using the back of a spoon. Refrigerate until the first layer of mousse is prepared. Then follow the same steps for filling the 3 different layers of chocolates as mentioned above. 


Refrigerate the cake for 4 hours or overnight to set. Run a knife around the edges of the cake to remove the sides of the pan. Before serving dust the top of the cake with cocoa powder and decorate with fresh berries or more chocolate if desired. Enjoy!!
