Panna Cotta with raspberry jelly - time for some mini celebrations

I absolutely love mini desserts. And making little desserts......gives me immense joy. I had got these small glasses from my mom long back and always wondered what I would with them. But when I started making miniature desserts using these glasses....it has been a regular thing at most of the get togethers and parties that happen at home.

So during one of those special occasions, I made a mini dessert with panna cotta and raspberry jelly. I really like the colour combination of red and white. It appeared very "Valentiny" (if that's a word). It looked fabulous.....tasted great.....and my guests were happy. 

So, here's the recipe:

First step is to make the raspberry jelly. You can use the ready to make packs, that are easily available at the markets. Just follow the instructions on the pack....and the jelly would be ready in minutes. And pour them into little glasses. 
Now for that presentation look. Place the glasses diagonally in a large serving plate and keep an inverted bowl in the centre. This way the glasses stayed still. Then  refrigerate it in this position till the jelly sets, for about 3 hours.

Next step was to make the panna cotta. I've already written about my basic panna cotta recipe in this blog....please do check it out. But anyway, here's the recipe:

Ingredients:
1 1/2 cups cream
1 1/2 cups mIlk 
1/2 cup sugar
1 vanilla bean pod (1-2 tsp vanilla extract)
2 1/2 teaspoons gelatin

Method:
Place the cream and milk in a saucepan. Use a small sharp knife to split the vanilla bean lengthwise, then scrape the seeds from inside the bean. 
Add the seeds and bean to the saucepan. Slowly bring to the boil over a medium heat. Remove from the heat and set aside for 10 minutes. 
Discard bean from cream mixture. Add sugar and return to a low heat. Cook, stirring, for 5 minutes, or until sugar dissolves.
Place 2 tablespoons of boiling water in a small heatproof bowl. Sprinkle over gelatin. Bring a small saucepan of water to boil. Remove from heat. 
Sit the bowl of gelatin in the water and stir until dissolved. Cool slightly, then stir into the cream mixture.

The panna cotta mixture is ready.

Assembling the mini dessert:
By now the jellies should hved set, in the diagonal position in the glasses. Take out the glasses, kept it upright and pour the panna cotta mixture up till the brim. 

Make sure that the panna cotta isn't hot when poured into the glass with jelly, else it would have melt and get everything mixed up. 
Once that is done, refrigerate it again for 4 hours. 

That's it. It might seem hard and time consuming, but it is worth it for all the praise your gonna get from your guests at the next party. It's yumm......melt in the mouth.....wanting for more.....well that's how my guests felt that day. 


Try it....it's an easy dessert. You can be creative in the presentation in so many ways.
