Quick Bites for the summer - Sandwiches & Toasties

When there are kids in the house, we're always up to making yummy and healthy snacks for them. They are always hungry...... and keep munching on food most of the time. 

Bread is always around in my home. Miss J and our little man loves bread a lot. Whether it's French Toast or simply spread with Nutella or topped with scrambled eggs......they like it all. 

In the summer vacation time I made quick and easy snacks using bread. A sandwiches and pizza toasties. All of them were instant hits with my kids. Even Mr. Peter enjoyed it. 

So here are the recipes:

Egg & avocado sandwich

Ingredients
2 hard boiled eggs- coarsely chopped
1 avocado 
Green lettuce
Spring onions finely chopped 
1 Tomato - deseeded and finely chopped
Salt & pepper
Bread slices

Method
With a sharp knife cut the avocado lengthwise and twist halves apart. Scoop the flesh out with a spoon and mash it well. Add the eggs, tomato & spring onions and mix well. Season well with salt & pepper. Now spread this mixture between two slices of bread along with lettuce and enjoy your healthy sandwich. 

My little brother was the first person who introduced me to this green-skinned, pear-shaped fruit known as avocados. They are very nutritious and loaded with healthy fats, fiber and various important nutrients. They are a great addition to salads & sandwiches and a good substitute for butter and mayonnaise. 

Pizza toasties

Ingredients
Bread slices cut in halves
Chopped tomatoes
Chopped olives
Chopped onions
Shredded cheddar cheese or mozzarella cheese or mix both. 
Olive oil
Dried Mixed herbs

Method
Pre heat the oven at 200°C. 
Mix the tomatoes, onions and olives and put it on top of the bread slices. Top it off with some cheese. Drizzle olive oil and sprinkle little mixed herbs. Bake in the oven for 10 mins. 
Enjoy it while it is still warm. 

If there is a sudden craving for pizzas...and there are no pizza bases at home...this is my go-to dish.

So, there you go. 

Have it as an evening snack or pack it up in your kids lunch boxes. Carry it along for a picnic or cut them into small squares and serve it as appetisers in parties. All the ingredients used here are generally kept in most of our homes. It's healthy, colourful and easy to make. Try it!!!!

  Red velvet cupcakes There is something really elegant about red velvet cupcakes. They just look so cool and they taste awesome, especially when covered with a nice homemade cream cheese frosting. Velvet cake is thought to have originated in USA in the early 20th century. During WWII,  soldiers and civilians had to ration off food and supplies.
