So, here's the
recipe:
This recipe will
make about 1 1/2 cup of Mango Sauce
500gm Mango - fresh
1 Small Lime
1 1/2 tbsp Sugar
Method:
- Peel and slice the mangos into small cubes and place them into a small pot.
- Add the sugar and juice of one lime and stir to combine.
- Cook on low to medium heat for about 10 - 15 minutes or until the fruit is very soft and starts to fall apart, occasionally stirring to avoid burning. Remove from the stove and leave to cool down for about 5 minutes.
- Blend the cooked fruits until very smooth. It will take a few minutes of blending to get a very smooth, thick sauce.
- Once blended, taste the sauce and adjust the sweetness / acidity with a little bit more sugar or lime juice if needed.
- Strain the sauce through a mesh sieve to remove any fibres or unblended fruit. This would result in a very smooth and thinner sauce.
- Leave to cool down completely then transfer to a sealed jar / container and keep in the fridge for up to a week.
So go ahead and have yourselves Mango-licious moments. This mango sauce will instantly elevate any dish and will satisfy all your mango cravings.
