Mango Sauce

With the arrival of summer, Mango Mania takes over in my home. Widely cherished, the mango is not only juicy, pulpy, and irresistibly luscious, but also brimming with a sweet, refreshing flavor and a wealth of essential vitamins and minerals.

Celebrated as the national fruit of India, the mango truly lives up to its title as the king of fruits. It appears in an array of shapes and sizes, with countless varieties cultivated across the country—Alphonso, Dasheri, Langra, Badami, Raspuri, Sindhura, and Banganapalli, to name just a few. Flourishing during the summer months, mangoes are enjoyed far and wide, their vibrant taste and succulent texture making them a seasonal favorite that delights everyone.

Mangoes are one of those gorgeous summer fruits we just can't get enough of. Their bright, sweet creamy flesh are amazing on their own, sliced and eaten fresh and getting every last bit from the seed inside. When you're looking for something different to make with mangoes you can make this versatile easy fruit sauce. It will brighten up your summer desserts in an instant.

This easy mango sauce has a wonderful natural creaminess and is super easy to make with just three ingredients. Sweet and tangy with tropical flavours, it is the perfect addition to any of your sweet cravings….be it cheesecake, ice cream, fruit salad or panna cotta!

So, here's the recipe:

This recipe will make about 1 1/2 cup of Mango Sauce

Ingredients:
500gm Mango - fresh
1 Small Lime
1 1/2 tbsp Sugar

Method:

  • Peel and slice the mangos into small cubes and place them into a small pot.
  • Add the sugar and juice of one lime and stir to combine.
  • Cook on low to medium heat for about 10 - 15 minutes or until the fruit is very soft and starts to fall apart, occasionally stirring to avoid burning. Remove from the stove and leave to cool down for about 5 minutes.
  • Blend the cooked fruits until very smooth. It will take a few minutes of blending to get a very smooth, thick sauce.
  • Once blended, taste the sauce and adjust the sweetness / acidity with a little bit more sugar or lime juice if needed.
  • Strain the sauce through a mesh sieve to remove any fibres or unblended fruit. This would result in a very smooth and thinner sauce.
  • Leave to cool down completely then transfer to a sealed jar / container and keep in the fridge for up to a week.

So go ahead and have yourselves Mango-licious moments. This mango sauce will instantly elevate any dish and will satisfy all your mango cravings.

Crunchy Veggie salad with a thousand island dressing

A salad is one such dish which consists of small pieces of food mixed with a sauce. It may contain virtually any type of ready to eat food. What I like about salads is that we can be so creative with the ingredients which is based around a wide variety of foods like vegetables, fruits, cooked meat, eggs, nuts and leafy greens. Garden salads use a base of leafy greens like lettuce, arugula, kale or spinach; they are common enough that the word salad alone often refers specifically to garden salads.  Other types include Mexican bean salad, tuna salad, Lebanese fattoush, Greek salad, Thai Raw Papaya Salad and Japanese somen salad (a noodle-based salad). The sauce used to flavor a salad is commonly called a salad dressing; well-known types include Ranch, Thousand Island, Caesar and French vinaigrette. Salads can be served at any point during a meal such as an appetiser or side dish or as a main course.  Food historians tell us salads (generally defined as mixed green...

Christmas Fruit Cake—Because It’s Not Christmas Without It!

♪ It's the most wonderful time of the year ♪  When December arrives, that’s the melody that plays in my head. Christmas is perhaps the most widely celebrated holiday across the world, shaped by centuries of both religious devotion and secular customs. At its heart, Christmas commemorates the birth of Jesus Christ, observed on December 25th in most nations. Yet the festivities begin weeks earlier, filling homes and streets with vibrant lights, stars, and beautifully decorated Christmas trees. Many families also create a small manger scene to honor the nativity. The season is alive with carols sung in joy, kitchens bustling with homemade treats, and hearts open to generosity. Known as the “season of giving,” Christmas inspires people to exchange gifts with loved ones and extend kindness to those in need. On Christmas Day itself, traditions often include wearing new clothes, attending church services, lighting fireworks, and gathering for a grand feast with family. It is a tim...

Goa calling - Beaches, Sunshine & Memories to Treasure

Vagator Beach College days are among the most colorful chapters of our lives, filled with laughter, friendships, and unforgettable adventures. Class trips and outings, in particular, leave behind memories that stay etched in our hearts forever. In my final year of college, we set out on a trip to Goa—right around the time when the Hindi blockbuster Dil Chahta Hai was ruling the theatres. That film was my first glimpse of Goa’s charm, but experiencing it in person was something else entirely. I can still recall the joy of those days: the golden beaches, the lively parties, the endless shopping, and the mouthwatering food shared with friends. When the trip ended and we returned home, I was left with a lingering desire—a constant urge to go back to Goa again. That’s the magic of Goa. It isn’t a place you visit once and cross off your list. The first trip sparks a longing to return, and by the second, it begins to feel like a tradition waiting to be continued. Goa is renowned f...
