Mango Sauce


Come Summer  and the Mango Mania starts in my home. 

Mango is one of the most loved fruits here. It is not only a very juicy, pulpy and luscious fruit, with a wonderful sweet and refreshing flavour; but also a rich source of various vitamins and minerals. 


Mango is the national fruit of India which is loved by one and all. It is regarded as the king of fruits and comes in various shapes and sizes. There are a huge variety of mangoes which are cultivated in India like Alphonso, Dasheri, Langra, Badami, Malda, Banganapalli among others. It grows extensively during the summer season across various parts of India. It is a tasty fruit and everyone loves its juicy and lip-smacking flavour. 


Mangos are one of those gorgeous summer fruits we just can't get enough of. Their bright, sweet creamy flesh are amazing on their own, sliced and eaten fresh and getting every last bit from the seed inside. When you're looking for something different to make with mangos you can make this versatile easy fruit sauce. It will brighten up your summer desserts in an instant.


This easy mango sauce has a wonderful natural creaminess and is super easy to make with just three ingredients. Sweet and tangy with tropical flavours, it is the perfect addition to any of your sweet cravings….be it cheesecake, ice cream, fruit salad or panna cotta !



So here's the recipe:


This recipe will make about 1 1/2 cup of Mango Sauce


Ingredients

  • 500gm Mango - fresh 
  • 1 Small Lime
  • 1 1/2 tbsp Sugar



Instructions

  • Peel and slice the mangos into small cubes and place them into a small pot.
  • Add the sugar and juice of one lime, and stir to combine.
  • Cook on low to medium heat for about 10 - 15 minutes or until the fruit is very soft and starts to fall apart, occasionally stirring to avoid burning. Remove from the stove and leave to cool down for about 5 minutes.
  • Blend the cooked fruits until very smooth. It will take a few minutes of blending to get a very smooth, thick sauce.
  • Once blended, taste the sauce and adjust the sweetness / acidity with a little bit more sugar or lime juice if needed.
  • Strain the sauce through a mesh sieve to remove any fibres or unblended fruit. This would result in a very smooth and thinner sauce. 
  • Leave to cool down completely then transfer to a sealed jar / container and keep in the fridge for up to a week.
