Chicken Coleslaw Sandwich

Kentucky Fried Chicken aka KFC, used to be my favourite food when I was young. Almost every weekend my Dad used to take my kid brother and me to this fast food joint and we would have the bucket meal of fried chicken with the buns, french fries and the coleslaw. This menu was our standard order every time we went there.

It's been so many years.....decades maybe, but still this is one fast food joint we have to visit atleast once a month.....even now. Miss J and our little man loves it too. For me, it's not just the juicy crispy chicken that's delicious, but also the cold coleslaw that it comes along with.

Coleslaw (also known as cole slaw or simply slaw) is a salad consisting primarily of finely-shredded raw cabbage and dressed most commonly with a vinaigrette salad dressing. Prepared in this manner, coleslaw can be pickled for up to four weeks if it is stored in an airtight container. Mayonnaise is also commonly used.

The term coleslaw came from the Dutch term koolsla, meaning cabbage salad. The kool part is the Dutch word for cabbage and the sla part is a Dutch abbreviation of the word salade.
Today, coleslaw is frequently served as a side dish in traditional meals in many countries, and can be seen in major fast food chains as well.

I think the combination of the chicken and coleslaw is a good one!! So whenever I have some leftover chicken, I make a sandwich along with some coleslaw.
I like to add a pinch of sugar and a dash of vinegar in my coleslaw....but you can omit it completely.  Also, I like it creamy, so I always add more mayonnaise and tomato sauce.....this gives it that slight pink colour too.

So here's my recipe:

Ingredients
1 Cup Chicken -  cooked, pulled & shredded
1 Cup Green Cabbage - finely chopped
1/2 Cup Carrot - finely chopped
1/4 Cup Onion - finely chopped
4 Tbsp Mayonnaise
2 Tbsp Tomato sauce
Sugar & white vinegar to taste
Salt & pepper to taste
Green lettuce
Bread slices

Method
Mix all the ingredients together in a medium sized bowl, except the lettuce. Now spread this mixture between two slices of bread along with lettuce and enjoy.

You could even toast the bread slices with a bit of butter before filling it with the coleslaw or add a slice of cheese and grill it; if you prefer grilled sandwich.

So, there you go.

Have it as an evening snack or pack it up in your kids lunch boxes. Carry it along for a picnic or cut them into small squares and serve it as appetisers at parties.

The coleslaw alone tastes great....you can take it to your next potluck dinners. It makes a great side dish too, it's a good accompaniment for a pulled pork sandwich or even a hot dog or barbecue chicken or burgers.

All the ingredients used here are generally kept in most of our homes. It's healthy, colourful and easy to make.

Try it!!!!

They say that no matter how old you become, when you are with your siblings, you revert back to your childhood. Growing up with my kid brother was one of the best adventures of my life. We’ve laughed over the silliest of things, fought for the tv remote almost everyday, we played as a team in home video games of Contra and Mario, watched the same movies over and over again and enjoyed the food during our every trip to the Gulf. He was my first “Foodie Buddy”. Years have passed by, and now when we are living in different continents, amidst the hustle and bustle of everyday life, we still connect over food in our conversations of what we used to eat in the past and what we relish today. Growing up, we didn’t have big celebrations during birthdays with cakes and parties…didn’t feel the need then…but today, we look forward to celebrate any occasion. So, whether we’re near or far, birthdays and anniversaries we celebrate for each other wherever geographically we are. While my kid brother ce...

Kannur - it's about the beaches, sunsets, malabar cuisine & more....

Kerala is my native land. I'm a Malayalee by birth..... but, I grew up in Bangalore. I've stayed all my life in Bangalore. Going to Kerala was either to meet my grandparents during school vacations or to attend some family functions and get togethers. But none of those times did I ever have a chance to actually sight see this state known as "God's own country". It was after we got married that Mr. Peter has taken me to different places in Kerala, like Munnar, Alappuzha, Kochi, Calicut and Kannur. All of these places are wonderful and each has its own distinctiveness. Kannur is located in the northern part of Kerala. Cannanore is the old English name for this city. Kannur is known as the Land of Looms And Lore, because of the loom industries functioning in the district and the ritualistic folk arts held in temples. Kannur is famous for three main things....its beautiful beaches, Theyyam - its native performing art, and its handloom industry. Mr. Pe...

Ooty - A drive to the Queen of the Hills

To quote in the words of Dalai Lama - "Once a year, go someplace you've never been before".  School had closed for the summer and we haven't been anywhere for quite a long time.....and I've often felt that it is not good to keep a vacation waiting. The summer heat was really getting on to us and we needed a break.....and us being the splurge of the moment kinda people....we took a spontaneous decision to drive to Ooty, one of the most of the most beautiful hill stations in India, and hence also fondly referred to as the “Queen of Hill Stations”. From north to south, India is blessed with nature's most beautiful creations that turn the country into a heavenly abode for travellers.  One such pristine resort nestled at a height on Nilgiri Hills in South India is Ooty (Ootacamund).  This hill station has splendid green downs and lofty hills of extraordinary scenic beauty and is endowed with a salubrious climate. Located in the Western Ghats at a h...
