Kentucky Fried Chicken, better known as KFC, was my absolute favorite treat when I was growing up. Almost every weekend, my dad would take my younger brother and me to the restaurant, and without fail, we’d order the bucket meal—crispy fried chicken, soft buns, golden French fries, and that refreshing coleslaw. It became our go-to tradition, the same order every single time. For me, the joy wasn’t just in the crunchy, juicy chicken, but also in the cool, creamy coleslaw that perfectly completed the meal.
Coleslaw (also known as cole slaw or simply slaw) is a salad consisting primarily of finely shredded raw cabbage and dressed most commonly with a vinaigrette salad dressing. Prepared in this manner, coleslaw can be pickled for up to four weeks if it is stored in an airtight container. Mayonnaise is also commonly used.
The term coleslaw came from the Dutch term koolsla, meaning cabbage salad. The kool part is the Dutch word for cabbage and the sla part is a Dutch abbreviation of the word salade.
Today, coleslaw is frequently served as a side dish in traditional meals in many countries and can be seen in major fast-food chains as well.
I think the combination of the chicken and coleslaw is a good one!! So, whenever I have some leftover chicken, I make a sandwich along with some coleslaw.
I like to add a pinch of sugar and a dash of vinegar in my coleslaw....but you can omit it completely. Also, I like it creamy, so I always add more mayonnaise and tomato sauce.....this gives it that slight pink colour too.
So, here's my recipe:
Ingredients:
1 Cup Chicken - cooked, pulled & shredded
1 Cup Green Cabbage - finely chopped
1/2 Cup Carrot - finely chopped
1/4 Cup Onion - finely chopped
4 Tbsp Mayonnaise
2 Tbsp Tomato sauce
Sugar & white vinegar to taste
Salt & pepper to taste
Green lettuce
Bread slices
Method:
Mix all the ingredients together in a medium sized bowl, except the lettuce. Now spread this mixture between two slices of bread along with lettuce and enjoy.
You could even toast the bread slices with a bit of butter before filling it with the coleslaw or add a slice of cheese and grill it; if you prefer grilled sandwich.
So, there you go.
Have it as an evening snack or pack it up in your kids lunch boxes. Carry it along for a picnic or cut them into small squares and serve it as appetisers at parties.
The coleslaw alone tastes great....you can take it to your next potluck dinners. It makes a great side dish too; it's a good accompaniment for a pulled pork sandwich or even a hot dog or barbecue chicken or burgers.
