Kannur - A Journey Through Waves, Forts, Malabar Cuisine and Folklore

Kannur, situated in the northern region of Kerala, was once known by its old English name, Cannanore. Often referred to as the Land of Looms and Lore , the city earned this title from its thriving handloom industry and the vibrant ritualistic folk arts performed in its temples. Kannur is celebrated for three defining features: its serene and picturesque beaches, Theyyam —a unique and powerful native performing art, and its renowned handloom tradition that continues to shape its cultural identity. The Portuguese were the first Europeans to set foot in Kerala, marking the beginning of a new chapter in India’s history. They became the earliest foreign power to establish governance on Indian soil. Their arrival was the outcome of daring voyages launched by European explorers from the 14th century onward, driven by the search for new markets and valuable raw materials. On 20 May 1498, Vasco da Gama landed on the sands of Kappad beach in Kozhikode, a moment that forever altered...

Carrot Cake

It was school summer vacation for our little man and Miss J. We had been to Kerala, so kids could spend some time with their grandma. During our stay there, Mother's Day was coming up and we wanted to do something special.  Miss J had packed along her art kit, so she was making a greeting card for grandma. This evolution is said to be originated during the Middle Ages when sugar and sweeteners were expensive for most individuals and often hard to find, so many people used carrots as a substitute for sugar. Recipes for carrot cake occur as early as 1827, in a French cookbook published in England. According to the Culinary Heritage of Switzerland, it i...

Fudgy Brownies

What’s the very first thing you baked? Every baker has a beginning, a first creation that marks the start of their journey. For me, it was brownies. That rich, fudgy classic became my entry point into the world of baking—a simple recipe, yet one that opened the door to endless possibilities in the kitchen.  Chocolate brownies are the classic American dessert, beloved in countless variations. Whether you prefer them fudgy, chewy, or cakey; savor the gooey middle or the crisp edges; indulge in dark chocolate richness or the sweetness of milk chocolate; enjoy them warm from the oven or cool to the touch—almost everyone has a brownie style they call their favourite. The first brownie, much like the sandwich, pizza, or potato chip, was the result of a happy culinary accident. The baker didn't have baking powder and ended up with an unleavened fudgy treat. The classic brownie consists of only butter, sugar, chocolate, eggs and flour. One legend about the creation of brownies is...
