Quick Bites for the summer - Sandwiches & Toasties

When there are kids in the house, we're always up to making yummy and healthy snacks for them. They are always hungry...... and keep munching on food most of the time.  Bread is always around in my home. Miss J and our little man loves bread a lot. Whether it's French Toast or simply spread with Nutella or topped with scrambled eggs......they like it all.  In the summer vacation time I made quick and easy snacks using bread. A sandwiches and pizza toasties. All of them were instant hits with my kids. Even Mr. Peter enjoyed it.  So here are the recipes: Egg & avocado sandwich Ingredients 2 hard boiled eggs- coarsely chopped 1 avocado  Green lettuce Spring onions finely chopped  1 Tomato - deseeded and finely chopped Salt & pepper Bread slices Method With a sharp knife cut the avocado lengthwise and twist halves apart. Exploring Kochi......in one day

After our little cruising in the houseboat of Alappuzha, it was time for us to head back home to Bangalore. Our return was scheduled in the evening from Kochi. So, we had a whole day to explore this city, which is fondly known as the Queen of the Arabian Sea . Now, Kochi is a lovely seaside city that is flanked by the Western Ghats on the east and the Arabian Sea on the west. Over the years, it has emerged as the commercial and industrial capital of Kerala. Kochi has a world class port and international airport that link it to many major cities worldwide. Long time ago, the Arabs, British, Jews, Chinese, Dutch, and Portuguese have left marks on the history and development of Kochi.  We took a local super fast bus from Alappuzha & reached Kochi within an hour. Cranberry & Ginger Fizz

When we eat out, I like to order for mocktails which are brightly coloured, and to my luck they taste good. I like cranberry based drinks most of the time. I was having a party at home a couple of months back and was looking online for some recipes for mocktails, especially something which had cranberry in it. I found this one which had ginger ale in it. Mr. Peter likes ginger & mint, so I  made a few changes to that original recipe and it turned out really well. All our guests enjoyed it and I've made it a couple of times already. This is a perfect drink during the summer time. When the temperatures are rising and it's really getting hot, it's essential that one stays hydrated all the time. It helps in cooling down. You can fix it up really quick and it's very easy to prepare. Try this such summer drink which not only looks good but tastes great and is absolutely refreshing.  Ingredients: 1 cup cranberry juice 1 cup ginger ale 1/2 cu

Chocolate and Walnut Mini Muffins

I've always wondered whether there is any difference between cupcakes & muffins. At first I thought they were both the same, maybe it was named differently in different regions or countries. So I did a little research online and gathered whatever information I could. Actually there's not much of a difference. If you frost the final product, they both look and taste almost the same. The little difference that there is..... lies in the way they are prepared. Cupcakes have the butter and sugar creamed together before adding other ingredients one at a time, while muffins throw everything in at once and mix it together. Probably that's why cupcakes are light & airy and muffins are much denser. Muffins are available in both savoury varieties, such as cheese muffins, or sweet varieties such as blueberry, chocolate chip, lemon or banana flavours. Cupcakes or muffins......My kids like them both. Especially if it is chocolate. So here I'm sharing a quick and eas
